Ingredients

Chicken breasts or thighs, cut into bite-sized pieces
Cornstarch
Cooking oil (vegetable or sesame oil)
Pineapple chunks (fresh or canned)
Bell peppers, sliced (red, green, or yellow)
Onion, chopped
Garlic, minced
Ginger, minced
Soy sauce
Pineapple juice
Brown sugar
Vinegar (rice vinegar or apple cider vinegar)
Chili sauce (optional, for spice)
Salt and pepper to taste
Green onions, chopped (for garnish)
Cilantro, chopped (optional, for garnish)
Sesame seeds (optional, for garnish)

Instructions

1. Cut the chicken into bite-sized pieces and coat in cornstarch.
2. Heat oil in a pan over medium-high heat and cook the chicken until golden brown.
3. Remove the chicken from the pan and set aside.
4. In the same pan, sauté chopped onions and bell peppers until slightly softened.
5. Add pineapple chunks and cook for another minute.
6. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, vinegar, minced garlic, grated ginger, and chili sauce.
7. Pour the sauce into the pan and bring to a simmer.
8. Return the cooked chicken to the pan and toss to coat in the sauce.
9. Cook until the sauce thickens and the chicken is fully coated.
10. Garnish with green onions, sesame seeds, or cilantro.
11. Serve hot over cooked rice for a complete meal.
12. Optional: Serve in a hollowed-out pineapple for a fun presentation.

Notes

Use chicken thighs instead of breasts for a juicier and more flavorful dish.

Coating the chicken in cornstarch before cooking helps create a crispy texture and thickens the sauce.

For a fun presentation, serve the dish in a hollowed-out pineapple to impress your guests.
