Instructions

1. Heat olive or vegetable oil in a large pan or skillet over medium-high heat.
2. Season the chicken breasts or thighs with salt and pepper (optional: add thyme or favorite spices).
3. Sear the chicken in the pan until browned on both sides, then remove and set aside.
4. In the same pan, add rinsed long grain white rice and toast lightly for 1-2 minutes.
5. Add chicken broth and stir to combine with the rice.
